The simple art of grinding roasted coffee beans and adding hot water to make an infusion has undergone many changes through the ages. Coffee brewing may be traced to the act of "drip brewing"- a method that is 125 years old. It originated in France and has changed very little since its discovery. It consisted of a two level pot. Water was poured in the upper chamber and was allowed to drain into lower compartment. At the same time the "pumping percolator" made its appearance. In this method water was forced up a tube. It then trickled through the ground coffee beans and settled in the bottom chamber.
During the nineteenth century vacuum brewers were largely used. Though this method of brewing was cumbersome yet people preferred it because they could produce a clear brew. In this process water was heated in a lower vessel and it was allowed to go up through a narrow tube into an upper vessel containing ground coffee. After sometime had elapsed the lower vessel would become empty. The ensuing vacuum would draw the coffee back into the lower vessel. The vacuum brewers soon gave way to percolators,which became ubiquitous in many homes from the mid nineteen century onwards. At the same time innovations in electrical appliances helped manufacturers to produce more sophisticated model of percolators and vacuum brewers.
However as time passed, percolators remained locked in traditional styles. While vacuum brewers began to undergo many technical innovations. Aluminum, chromium and other metals used to manufacture percolators became scarce during the Second World War. Manufacturers began to invent sleek forms in keeping with the times.
The drip coffee maker or the dripolator was yet another device used to make coffee. The drip brew coffee maker combined all aspects of both "The drip-brew process and the percolating process.
